This week at Crumbl, they refused to declare summer finished. With a nod to Midnight Sun by Zara Larsson, make your way to Crumbl this week for one last Eurosummer moment without ever stepping foot on a plane. It appears Crumbl is going the extra mile to honor the Swedish icon by crafting an entire cookie inspired by one of Sweden’s beloved candies, Bubs.
The cookie aims to mirror the flavors and mouthfeel of perhaps the most iconic Bubs flavor of all time, the Strawberry Vanilla. It presents a sour sugar coating and a plush, slightly chewy gummy texture. And, besides placing a fragment of the candy on top of the cookie, it’s described as not only tasting good but also faithfully recreating the candy’s flavor profile throughout the bite.
The base dough forms a marbled vanilla and strawberry blend that has freeze-dried strawberry pieces folded into the mixture. After baking, the treat is adorned with swirled strawberry and vanilla mousses. Crowning the creation is a dusting of the sour sugar that characterizes the candies, and, of course, a candy piece itself is added for garnish.
All Our Thoughts
Pros — I wasn’t as surprised as I expected to be by how enjoyable this cookie turned out, given my fondness for the source material. The mousses on top remained light and not overly sweet. The strawberry notes carried through the cookie without drowning the other flavors.
The standout aspect by far was the decision to weave the candy’s sour sugar coating into the cookie itself. That unexpected twist makes the cookie genuinely intriguing and actually nudges you to reach for another bite right away (which I did, naturally). And frankly, I’ll never complain about receiving a Bubs snack, whether it sits on a cookie or not.
Cons — My main gripe is that the dough itself didn’t fully live up to its own claims. It didn’t truly show the marbled look described, and with freeze-dried strawberries baked into the dough, I expected the strawberry flavor to feel a bit more natural. As usual, a touch of salt would have helped balance the sweetness since the dough alone came across as quite sugary. Fortunately, the other components do a lot to offset that.
