Crumbl’s Biscoff Ice Cream Cookie Review: A Taste Test

Last week, I stirred up a bit of a fuss by noting how straightforward Crumbl’s review scoring appears when there’s only a single fresh cookie to consider. Crumbl, perhaps factoring in my own hectic week and no one else, decided to push further by introducing a lineup entirely composed of returning flavors. There isn’t a unifying theme either: Raspberry Cheesecake, Cinnamon Roll, and the featured cookie all sit within the “dessert-flavored dessert” realm, while White Drop and Chocolate Peanut Butter Brownie lean on Halloween staples for their toppings. (Pumpkin Chocolate Chip is just a good time solo—likely snagging second place in my informal ranking of this week’s lineup, much to the amusement or irritation of our own Rachel Jones.)

Consequently, I did something so unusual that I can’t recall another recent instance… I decided to review the Crumbl cookie that personally struck me as the most compelling. (Crazy, right?) Let’s see how Crumbl’s returning Biscoff Ice Cream cookie stands up to their latest innovations… just before Crumbl revs up the cookie-production engine again for me with a fresh lineup next week in exchange for a breezy two-week run.

Biscoff Ice Cream Crumbl Cookie Review

New Crumbl Cookie!

Pros: I’ve long had a fondness for Crumbl’s chilled-serving lineup, so this ice-cream-inspired treat already had me smiling before I took a bite. The brown sugar cookie base is indulgent and sweet, while the velvety Biscoff cookie butter buttercream (cookie buttercream? We should settle on a standard term soon) delivers a potent cookie-in-ice-cream impression, to the point where I hardly notice the absence of actual Biscoff in the cookie itself. This marks the first Crumbl creation in ages that I genuinely adored in a single sitting—nearly in one go, which is rare for me.

Cons: I’d prefer the Biscoff cookie crumble to be chunkier; the current delicate sprinkle lacks that crisp cookie texture. If larger chunks were incorporated into the buttercream itself rather than sprinkled on top, it would better replicate the mouthfeel of cookies mixed into ice cream. If Crumbl could deliver cookies & creme texture with the flavor of Biscoff, they might be celebrated for contributing to world peace through dessert.
