Tasting Panera’s Three-Cheese Lasagna Soup: Garfield-Grade Review

My aim in trying Panera Bread’s Three Cheese Lasagna Soup sprang more from morbid curiosity than genuine appetite. That said, I’m not anti-lasagna. I rocked “Garfield” tees through junior high, proudly, during Homecoming season. I recognize—and deeply admire—the allure of lasagna. I simply never pictured it as compatible with a “soup” format. Given its thick béchamel, beefy, layered sauce-laden structure, lasagna has always struck me as the anti-soup. Leave it out on the counter long enough, and it hardens into bricks we can stack and play with.

So I doubted Panera could craft something that looked like both a soup and lasagna at once and not come off as little more than a bowl of microwaved cheese ribbons with crumbly, dry ground beef. Dear reader: I. Was. Completely. Wrong. Let’s dive in.

Panera Bread’s Three Cheese Lasagna Soup: Reimagined

Pros: It’s not exactly the strongest starting point for a lasagna discussion, yet Panera’s Three Cheese Lasagna Soup turns out to be startlingly low in calories. A single cup hovers below 300 calories and a full bowl sits around 360. (Considering their French Ciabatta Dip Sandwich tips the scale at over 1,000 calories, that’s pretty remarkable.) More impressively, even with that modest calorie count, the dish remains a rich, flavorful soup without feeling heavy, while delivering a distinctive lasagna character. There is a broth to it—less abundant than in a traditional chicken noodle soup, but present. The soup feels meaty, yet cheesy and bright, with tomato clarity, a gentle peppery lift, and a hint of Italian herbs (notably oregano and garlic) woven in.

The melted cheese doesn’t take over. And that would be an easy win for a “lasagna soup” (just drown us in cheese because we love it). Instead, the cheese appears as delicate ribbons, melt-soft and never chewy, never greasy clumps. The noodles stay tender without becoming mushy.

Cons: The ground meat provides great texture, but its share is a touch light in the overall mix. On the flip side, this might be what prevents the dish from tipping into a stew (which is what I briefly anticipated). In truth, trimming the meat a bit and keeping melted cheese restrained yields a palatable, nearly light lunch—a small miracle for an equation that began with lasagna turned into soup!

Our Final Verdict

Rating:

8.5/10

I’d have preferred a higher mark, nine out of ten, yet the salt level nudges the score downward just enough (let’s all keep an eye on sodium). You won’t be tasting the full heft of a sizeable lasagna slice, but the dish delivers that unmistakable comfort-food mood.
