Taste Test: Shake Shack’s Biscoff Cookie Butter Tiramisu Shake at NYC Innovation Kitchen

According to trend watchers, tiramisu is enjoying a breakout year. Variant after variant of this luxe dessert are sweeping through feeds with no sign of stopping. Even the tiramisu flavor itself is taking the food and beverage world by storm. Shake Shack seems to be riding the same wave; the chain has revived its tiramisu milkshake with a bold new twist: Biscoff Cookie Butter (plus Biscoff cookie crumble, to boot).

Although Shake Shack has previously experimented with tiramisu in milkshake form (first in 2023 and again as recently as January this year), this appears to be the burger chain’s inaugural collaboration with Biscoff—long overdue in my opinion. How has this elevated fast-casual spot not offered a Biscoff Cookie Butter Shake before now? Comparatively smaller brands have already explored similar offerings.

Shake Shack invited me to sit down with their culinary team at their NYC Innovation Kitchen so I could sample the Biscoff Cookie Butter Tiramisu Shake firsthand. Let’s take a look at this decadent new addition from one of the top players in the milkshake scene.

Pros: While plenty of brands have offered some form of cookie butter shake, this rendition may set the bar so high that others will find it tough to match… at the expense of something we’ll touch on shortly. Shake Shack has crafted a remarkably rich, luxurious milkshake that had me pausing mid-sip to resist the urge to stage a playful redevelopment of a beloved local theatre. If you’re a cookie butter enthusiast (and who isn’t?), this is a must-try.

Cons: I get that Biscoff leads the name, but I would have welcomed a touch more balance between the two flavors. While I haven’t had the chance to try a true Biscoff Cookie Butter Tiramisu, I suspect the classic tiramisu coffee notes could be more pronounced than what I tasted in this very good milkshake. I wouldn’t be surprised to see this shake return next year in a version without the tiramisu.

Speaking of Biscoff, be sure to fold the Biscoff cookie crumble-topped whipped cream into your shake about halfway through your cup. Otherwise you’ll end up with a dense, cookie-forward whipped cream layer at the bottom—not the worst thing in the world, but dispersing the crumbly texture throughout the cup might have amplified those missing tiramisu vibes I was hoping for.
